They are one of my favorite quick, healthy lunches (or dinners sometimes). This lazy leafless spinach pie is ready in 20 minutes and is very nutritious too.

In fact, you don't need to accurately measure quantities as how you make your spinach pie depends on how rich in ingredients you want it to be.

I personally love spinach so I put enough in it. In addition to spinach in my spinach pie, I add chopped onion and garlic. If I don't have plant-based white cheese at home, I add whatever grated cheese I have. A little salt and some pepper and the filling is ready.

While the spinach is wilting, I make an easy, vegan béchamel in another dish. I mix the spinach with the béchamel, add some grated cheese or vegetable feta and transfer the mixture into a tortilla.

The easiest spinach pie in the world. Ready in 20'.

Ingredients

  • 1 large tortilla
  • 3-4 cup frozen spinach
  • 1/2 onion
  • 1-2 garlic cloves
  • 2-3 tbsp shredded vegan cheese (if you like)

for bechamel:

  • 10 ml olive oil
  • 10 gr. flour
  • 100 ml almond milk
  • salt
  • spice mix

Instructions 

  • Start by sauteing the spinach, onion and garlic in a little olive oil. 2-3 minutes is enough. Add salt and spice mix.
  • Mix the olive oil with the flour in a saucepan. Once they are homogenized, add the milk and continue mixing. Add the salt and spices. Within 1-2 minutes you will have a cream ready. Mix the cream with the spinach mixture. Add the grated cheese and mix.
  • Place the tortilla in a round ovenproof dish or even a square dish. Pour in the spinach mixture and bake at 180 degrees for 10-15 minutes. If you see that the tortilla is sticking to the sides, cover your pan with non-stick paper and aluminum foil.
  • Let it cool for around 10 minutes and enjoy the easiest spinach pie.
