Great oven baked potatoes, different from the usual with sun-dried tomatoes.

In order to make these oven baked potatoes you will need, in addition to potatoes, sun-dried tomatoes or sun-dried tomatoes in oil, olive oil, oregano, some grated cheese of your choice (if you are vegan you can use some vegetable grated cheese), oregano, salt and pepper .

To make oven baked potatoes tastier, it is best to first boil them after cutting them into bites for about 20 minutes. Then mix them with the sun-dried tomato mixture. Put the potatoes in a preheated oven at 180C for 20-25 minutes.
If you want your potatoes to become crispy, do the following. As soon as you drain them, put them back in the pot. Cover and beat the potatoes for a while. Then continue your recipe as normal.

Oven Baked Potatoes with Sun-Dried Tomatoes
Ingredients
- 800 gr. potatoes
- 35 gr. sun-dried tomatoes
- 35 gr. olive oil
- 2 tbsp shredded cheese of your choice
- 1 tsp oregano
- salt
- black pepper
Instructions
- Start by boiling your potatoes in salted water. To cook faster, simply cut the potatoes into bite-sized pieces. If they are organic, you can also leave them with the skin.
- Drain them. Pour the sun-dried tomatoes, olive oil, oregano, grated cheese, salt and pepper into the food processor and beat well. Mix your potatoes with the sun-dried tomato mixture.
- Transfer to a baking tray and bake at 180 degrees in a preheated oven for 20-25 minutes. Take out and enjoy.
