A great potato side dish that you will love.
- 800 gr. potatoes
- 35 gr. sun-dried tomatoes
- 35 gr. olive oil
- 2 tbsp shredded cheese of your choice
- 1 tsp oregano
- salt
- black pepper
Start by boiling your potatoes in salted water. To cook faster, simply cut the potatoes into bite-sized pieces. If they are organic, you can also leave them with the skin.
Drain them. Pour the sun-dried tomatoes, olive oil, oregano, grated cheese, salt and pepper into the food processor and beat well. Mix your potatoes with the sun-dried tomato mixture.
Transfer to a baking tray and bake at 180 degrees in a preheated oven for 20-25 minutes. Take out and enjoy.
