One of the most delicious and satisfying salads I have ever made. The main reason is that I really love couscous but also the fact that it is very easy and does not require much cooking.

The only ingredient that needs to be cooked is the couscous but that's not a big deal either. Do it according to the instructions on the package.
In addition to couscous to make this easy Israeli salad are: cherry tomatoes, zucchini, parsley, onion and feta cheese.

As for the dressing, this is also very easy and to make it you will need garlic, olive oil, lemon, salt and pepper.
Tips and Substitutions
If you are vegan, you can simply replace the feta with vegan feta.
The salad is just as delicious if you replace the couscous with barley or any other small pasta of your choice.

Israeli Salad with Cous Cous and Raw Vegetables
Ingredients
- 1/2 και 1/4 cup israeli couscous
- 2 cup water or vegetable broth
- 1/2 onion
- 400 gr. cherry tomatoes
- 1/4 cup feta
- 1 zucchini
- 1/4 cup parsley
- 1/4 cup olive oil
- 1-2 tbsp lemon
- 1 garlic clove
- salt
- black pepper
Instructions
- Start by boiling the couscous. Pour the salted water or vegetable stock into a saucepan. As soon as it boils, take it out of the oven and pour in the couscous. Cover with the lid and set aside for about 15 minutes. The couscous will puff up on its own. Uncover and mix with a fork.
- Meanwhile, cut the cherry tomatoes into quarters. Cut the courgettes into very thin slices because they will be eaten raw. Chop the onion and parsley. Grate the feta too.
- Put all the ingredients for the dressing in a jar, i.e. olive oil, lemon, garlic, salt and pepper. Close with the lid and beat the dressing well.
- Pour all the ingredients into a bowl and top with the dressing. Mix well and put your salad in the fridge for 30 minutes before enjoying it.
