A Mediterranean salad that you will want to eat again and again. Full of flavor, nutrients and super filling. With lentils, green beans and a divine super simple dressing that gives it that something.

For one of the tastiest salads you will need: beluga lentils (you can also use classic lentils), green beans, green or red pepper and onion.
For the simplest dressing you will need: olive oil, lemon, mustard, cumin, salt, pepper and nothing else.

Of course, if you want, you can add some pasta of your choice to your salad.

Mediterranean Salad with Lentils and Beans
Ingredients
for the salad
- 3/4 cup beluga lentils
- 100 gr. green beans
- 1 green pepper
- 1 onion
- 1 tbsp olive oil
- 1/2 cup feta cheese
- salt and black pepper
for the dressing
- 1 tbsp olive oil
- 1,5 tbsp lemon juice
- 1 tsp mustard
- 1/8 tsp cumin
- salt and black pepper
Instructions
- Start by boiling your lentils in salted water. They want about 20 minutes.
- In a pan pour 1 tbsp. olive oil and once heated add the beans, onion and pepper. Add salt and pepper. Cook for 8-10 minutes. Put it aside.
- Pour all the ingredients for the dressing into a jar. Close with the lid and beat well.
- Toss the lentils, vegetables and dressing in a large bowl. Mix well. Add the grated feta and mix again.
- Enjoy.
