A Mediterranean salad that you will want to eat again and again. Full of flavor, nutrients and super filling. With lentils, green beans and a divine super simple dressing that gives it that something.

For one of the tastiest salads you will need: beluga lentils (you can also use classic lentils), green beans, green or red pepper and onion.

For the simplest dressing you will need: olive oil, lemon, mustard, cumin, salt, pepper and nothing else.

Of course, if you want, you can add some pasta of your choice to your salad.

Ingredients

for the salad

  • 3/4 cup beluga lentils
  • 100 gr. green beans
  • 1 green pepper
  • 1 onion
  • 1 tbsp olive oil
  • 1/2 cup feta cheese
  • salt and black pepper

for the dressing

  • 1 tbsp olive oil
  • 1,5 tbsp lemon juice
  • 1 tsp mustard
  • 1/8 tsp cumin
  • salt and black pepper

Instructions 

  • Start by boiling your lentils in salted water. They want about 20 minutes.
  • In a pan pour 1 tbsp. olive oil and once heated add the beans, onion and pepper. Add salt and pepper. Cook for 8-10 minutes. Put it aside.
  • Pour all the ingredients for the dressing into a jar. Close with the lid and beat well.
  • Toss the lentils, vegetables and dressing in a large bowl. Mix well. Add the grated feta and mix again.
  • Enjoy.
