You only need one pot to prepare this tomato salad and it's even more perfect especially in the summer months.

It is essentially a combination of pasta salad and tomato salad that is ideal for the hot summer months. The boiled pasta is combined with the cool tomato salad and the cool dressing and the result is simply wonderful.

The ingredients you will need to prepare the pot tomato salad are: small pasta of your choice, tomato, cucumber, onion (if you want) and feta cheese.

For the dressing you will need olive oil, balsamic vinegar, water and salt.

Tips and Substitutions

If you prepare the salad for the office, do not add onion.

If you are vegan, you can replace the feta with vegan feta.

A great, easy tomato casserole that's perfect for the office, too.

Ingredients

  • 120 gr. small pasta of your choice
  • 300 gr. cucumber
  • 300 gr. tomatoes
  • 1/2 onion (if you want)
  • 180 gr. feta

for the dressing

  • 1 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • 2 tbsp water
  • salt

Instructions 

  • Boil your pasta in salted water according to the instructions on the package.
  • Drain the pasta and return it to the pot. Throw in the chopped cucumber, tomato, onion (if you choose to add) and feta cheese.
  • Pour all the ingredients for the dressing into a jar. Close the jar and beat the dressing well. Pour the dressing into the pot with your salad and mix well.
  • Enjoy.
