Tips and Substitutions

You can replace the kidney beans with chickpeas or even white beans.

If you are not vegan use yellow cheese of your choice.

This food is the easiest and fastest thing you can prepare to enjoy at noon or even in the evening.

Ingredients

  • 1 onion 
  • 1 carrot 
  • 1 red pepper
  • 2 garlic garlic 
  • 1 can kidney beans 
  • 1 tbsp ketchup 
  • 1 tsp cumin 
  • 1 tsp paprika
  • 1 tsp spice mix 
  • salt 
  • 2 slices yellow vegan cheese 
  • 2 tortillas

Instructions 

  • In a non-stick pan or wok, saute the onion, carrot, pepper and garlic in a little olive oil.
  • Add the beans after rinsing and draining them. Mix and pour in ketchup, cumin, paprika and spice mix. Add a little salt. Melt slightly with a fork.
  • Put aside.
  • Place one tortilla on the bottom of the pan or wok. Spread the bean mixture. Put the two slices of cheese and the second tortilla on top.
  • Allow 1-2 minutes for the bottom tortilla to get color and turn. Leave for another 1-2 minutes and remove. Cut into 4 and enjoy.
