The easiest and lightest egg salad is here and invites you to try it.

The basic ingredients you will use to prepare it are eggs, onion, carrot and green vegetables of your choice.

As for the sauce, I make it by mixing yogurt with mayonnaise. If you are on a strict diet, you can also replace the mayonnaise with yogurt and make your sauce only with yogurt. If you want, add some ketchup.

Ingredients

  • 8 hard boiled eggs 
  • 1 shredded carrot 
  • 1/2 cup green salad like arugula 
  • 1/2 onion 
  • 3 tbsp yogurt
  • 3 tbsp light mayo 
  • 1/4 tsp black pepper 
  • 1/8 tsp salt 

Instructions 

  • In a bowl, mix the yogurt, mayonnaise, salt and pepper. 
  • Chop your eggs, onion and green vegetables. Grate your carrot. 
  • Gently mix the eggs, onion, carrot and green vegetables. 
  • Pour the yogurt-mayonnaise mixture on top. Mix well and enjoy your egg salad in sandwiches, tortillas or as you like.
