An easy salad with lots of nutrients. This lentil salad with beetroot and feta cheese is a summer dream.

To make it you will need 3 very simple and basic ingredients: lentils (I use beluga lentils), boiled beets and feta cheese (if you are vegan you can use vegetable feta).
I first boil the lentils in salted water for 30 minutes, drain them and set them aside until I prepare the rest of the ingredients.
I take the beetroot ready boiled. You can also use raw beetroot if you want, as long as you grate it.

Then all you have to do is mix the 3 ingredients in a bowl.

Lentil, Beet and Feta Salad
Ingredients
- 4-5 boiled beets
- 200 gr. cooked lentils
- 70 gr. feta
- 2 tbsp apple vinegar
- 1 tsp olive oil
- salt
- black pepper
Instructions
- Put everything in a bowl and mix well.
- Your salad is ready.
