The most crispy greek melomakarona cookies that will delight you.

They are gluten-free melomakarona but they are also crunchy, which makes me unable to call them plain melomakarona, but melomakarona cookies. And I'm sure you'll love every bite.

INGREDIENTS AND SUBSTITUTIONS

Gluten free flour: This particular recipe is made with gluten-free flour and is ideal for those with gluten intolerance.

Sugar Substitute: I used monk fruit sugar which has 0 calories. You can put whatever substitute you want or sugar in the same amount.

Hazelnuts: Of course, instead of hazelnuts, you can put walnuts, which is the most common.

Olive oil: It is a necessary material in this recipe.

Tangerine Juice: You can replace with orange juice.

Cinnamon and cloves: These two spices are essential ingredients and give that something to melomakarona.

Ingredients

  • 180 gr. gluten free flour
  • 100 gr. sugar substitute
  • 30 gr. hazelnuts 
  • 1,5 tsp baking powder 
  • 110 gr. olive oil 
  • 60 ml. tangerine juice 
  • 1 tsp cinnamon 
  • 1 pinch cloves 

for the syrup: 

  • 165 gr. agave syrup 
  • zest of a tangerine
  • 65 gr. tangerine juice
  • 65 gr. water 
  • 1 cinnamon stick

Instructions 

  • Start by making the syrup. Put all the ingredients in a saucepan. Once they come to a boil, reduce the heat to medium and boil for another 5 minutes. Set aside and let the syrup cool completely before pouring it over the honey melomakarona cookies.
  • Pour the gluten-free flour, the grated hazelnut, the sugar substitute, the baking powder into a bowl. Add the olive oil, tangerine juice, cinnamon and cloves.
  • Mix well and form into balls. The recipe makes 15 balls.
  • Place the balls thinly in a pan as they will spread during baking.
  • Preheat the oven to 180C. Bake the melomakarona cookies for 15-17 minutes. Remove from the oven and pour the cold syrup directly over them. Let the honey melomakarona cookies absorb the syrup.
  • Serve with hazelnuts on top.
