Cottage cheese replaces feta, giving the dish a velvety, creamy texture without feeling heavy. It pairs perfectly with sweet cherry tomatoes and the pasta of your choice for a wholesome, summery meal that's incredibly easy to make.

Tips & Replacements
You can use whole wheat or gluten-free pasta.
If you want a bolder flavor, add a bit of paprika or chili flakes.
Cottage cheese can be replaced with ricotta.
This dish can be made vegan if you replace the cottage cheese with plant-based cream cheese.

Storage
The baked feta with cottage cheese can be stored in the refrigerator for 2 days. Reheat it in a non-stick pan with a little water to restore its juiciness.

Baked Feta but with Cottage Cheese
Ingredients
- 300 gr. cherry tomatoes
- 2 garlic cloves
- 1 tbsp olive oil
- 1/2 tsp thyme
- salt and black pepper
- 200 gr. cottage cheese
- 1/2 tsp mustard
- garlic powder
- 180 gr. whole wheat spaghetti
- A little chili or crushed red pepper for serving (optional).
Instructions
- I start by placing the cherry tomatoes in a baking dish. I add olive oil, salt, black pepper, and thyme. Then I add the garlic and mix everything together.
- I bake in a preheated oven at 200°C (390°F) for 25–30 minutes.
- Meanwhile, I boil the pasta in salted water according to the instructions on the package. I drain them and set aside.
- In the blender, I blend the cottage cheese with the mustard and garlic powder, if I choose to add it.
- I take the baking dish with the cherry tomatoes out of the oven. I mash the tomatoes with a fork, then add the cottage cheese. I mix well and finally add the pasta. Stir everything together, and my quick summer meal is ready.
