Ingredients

  • 300 gr. cherry tomatoes
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 1/2 tsp thyme
  • salt and black pepper
  • 200 gr. cottage cheese
  • 1/2 tsp mustard
  • garlic powder
  • 180 gr. whole wheat spaghetti
  • A little chili or crushed red pepper for serving (optional).

Instructions 

  • I start by placing the cherry tomatoes in a baking dish. I add olive oil, salt, black pepper, and thyme. Then I add the garlic and mix everything together.
  • I bake in a preheated oven at 200°C (390°F) for 25–30 minutes.
  • Meanwhile, I boil the pasta in salted water according to the instructions on the package. I drain them and set aside.
  • In the blender, I blend the cottage cheese with the mustard and garlic powder, if I choose to add it.
  • I take the baking dish with the cherry tomatoes out of the oven. I mash the tomatoes with a fork, then add the cottage cheese. I mix well and finally add the pasta. Stir everything together, and my quick summer meal is ready.
