We are making green pasta salad today and we are sure that they are getting a lot of good nutrients by eating it.

It is one of my favorite salads because it also contains pasta which I love. I made my own green pasta salad with carob rigatoni, which for some reason I love a lot lately. Of course, you can use any kind of pasta you want. It is good, however, to use small pasta and not spaghetti or something similar.

In addition to the pasta, my green pasta salad has peas, chickpeas and pine nuts.
As for the sauce, it is a classic vegan pesto, which of course gives the salad its green color and makes it so delicious.

Green Pasta Salad
Ingredients
for the salad
- 150 gr. small pasta of your choice
- 1 cup peas
- 1 cup boiled chickpeas
- 1/2 cup pine nuts
for the pesto
- 1 cup parsley
- 1 cup basil
- 3 tbsp walnuts
- 3 garlic cloves
- 2 tbsp lemon juice
- 1/4 tsp salt
- 2 tbsp olive oil
- 3-5 tbsp water
Instructions
- Start by boiling your pasta according to the instructions on the package. Along with your pasta, boil your peas.
- In the meantime, make your pesto by simply throwing all the ingredients into the food processor.
- In a large bowl, pour the pasta and peas after draining them. Add the chickpeas. and the pine nut. Pour over the pesto and mix well. Enjoy.
