If you often feel like you don't want to cook, if you're about to become a mom and you want to have meals ready in the freezer for the first days when you bring the baby home and you won't have time to cook, then this velvety red lentil soup is the perfect freezer meal.

Prepare it today, divide it into jars and put them in the freezer to have them ready whenever you simply don't want to or don't have time to cook. You just take a jar out of the freezer in the evening and leave it in the fridge. The next day you simply heat up your soup and enjoy it.

To make it you too will need red lentils, sweet potato, pepper, tomato, onion, garlic and spices.

Red Lentil Soup

Ingredients

  • 2 sweet potatoes
  • 2 peppers
  • 3 tomatoes
  • 3 garlic cloves
  • 1 onion
  • 250 gr. red lentils
  • 2 litres lt water
  • 1 tsp turmeric
  • salt and black pepper
  • 3 tbsp olive oil

Instructions 

  • Start by tossing the sweet potatoes, peppers and tomato into a roasting pan. Add 2 tbsp. olive oil and salt. Mix and bake in a preheated oven at 200C for 30 minutes.
  • In the meantime, in a non-stick pan, heat 1 tbsp. olive oil. Saute the onion and garlic. Add the turmeric, salt and black pepper.
  • Add the lentils and stir. Add the water and let the lentils boil for 20 minutes.
  • Toss the vegetables into the lentils and make the velouté soup with a blender. If you don't have one, just put all the ingredients in a blender and beat them well.
  • Your soup is ready. Let it cool and fill your jars.
