In a bowl, I pour the dates and hot water and let them soften for 20 minutes.
Meanwhile, in a bowl, I pour the water, orange juice, and olive oil.
In another bowl, I add the flour, the dates after pounding them in a food processor until they become a paste, the cinnamon, and finally all the liquids. I mix until I have a dough that doesn't stick to my hands.
If it sticks, add a little more flour.
I weigh out 45 g of dough and form about 40 cookies.
Bake in a preheated oven at 180C for 15-20 minutes.
