Easy Carrot Salad

A wonderful salad for a side dish but also for sandwiches with carrot as the main ingredient.

Ingredients

  • 300 gr. carrot sticks
  • 1 scallion
  • 2 tsp parsley

for the dressing

  • 1 1/2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp mustard
  • 1/4 tsp salt
  • 1/8 tsp cumin
  • 1/8 tsp black pepper

Instructions 

  • After cutting the carrots into very thin sticks and chopping the spring onion, make the dressing.
  • Pour olive oil, lemon juice, honey, mustard, salt, cumin and pepper into a jar. Cover and knock.
  • Pour the parsley and dressing into your salad and mix well.
  • Leave the salad aside for 1 hour before enjoying it so that all the ingredients bind together.
  • You can keep it in the fridge for up to 3 days.
