A wonderful salad for a side dish but also for sandwiches with carrot as the main ingredient.
- 300 gr. carrot sticks
- 1 scallion
- 2 tsp parsley
for the dressing
- 1 1/2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1/2 tsp mustard
- 1/4 tsp salt
- 1/8 tsp cumin
- 1/8 tsp black pepper
After cutting the carrots into very thin sticks and chopping the spring onion, make the dressing.
Pour olive oil, lemon juice, honey, mustard, salt, cumin and pepper into a jar. Cover and knock.
Pour the parsley and dressing into your salad and mix well.
Leave the salad aside for 1 hour before enjoying it so that all the ingredients bind together.
You can keep it in the fridge for up to 3 days.
