A quick salad that you can prepare whenever you don't feel like eating a lot.

For me this carrot salad is perfect not only as a side dish for your food but also for putting it in sandwiches.
To make it you will need carrots, green onions and parsley. As for the dressing, you will need olive oil, honey, lemon, mustard, salt, pepper and cumin.

Easy Carrot Salad
Ingredients
- 300 gr. carrot sticks
- 1 scallion
- 2 tsp parsley
for the dressing
- 1 1/2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1/2 tsp mustard
- 1/4 tsp salt
- 1/8 tsp cumin
- 1/8 tsp black pepper
Instructions
- After cutting the carrots into very thin sticks and chopping the spring onion, make the dressing.
- Pour olive oil, lemon juice, honey, mustard, salt, cumin and pepper into a jar. Cover and knock.
- Pour the parsley and dressing into your salad and mix well.
- Leave the salad aside for 1 hour before enjoying it so that all the ingredients bind together.
- You can keep it in the fridge for up to 3 days.
