A recipe that you will love for its simplicity and taste.
- 1/2 cup cashews
- 1 tbsp lemon juice
- 1 tbsp vinegar
- 1 and 1/3 cup almond milk
- 1/4 cup tapioca flour
- salt (if you want)
Start by beating all the ingredients in the blender. You can add salt later to see how much you want based on your personal taste. I do not put in my mozzarella at all. I prefer it slightly sweet.
Pour the mixture into a saucepan or frying pan. Cook on low heat for 10 minutes, stirring often.
Put in a bowl. Once cool, store your mozzarella in the refrigerator.
