Vegan carrot soup

A soup that will warm your soul

Ingredients

  • 1 tbsp olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 tbsp ginger
  • 5 cup carrots
  • 6 cup vegetable broth
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 400 ml. coconut milk
  • 1/2 lime
  • chili flakes (if you want)

Instructions 

  • Start by sautéing the onion in 1 tbsp olive oil for 5-6 minutes. Add the garlic and ginger and sauté for another 1-2 minutes.
  • Add the carrots, vegetable broth, salt, pepper and thyme. Cook for 20-30 minutes until the carrots are soft.
  • Put in the blender and beat until you get a velvety soup. Transfer back to the pot. Add the coconut milk and lime juice. Stir and serve.
