A soup that will warm your soul
- 1 tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 tbsp ginger
- 5 cup carrots
- 6 cup vegetable broth
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 400 ml. coconut milk
- 1/2 lime
- chili flakes (if you want)
Start by sautéing the onion in 1 tbsp olive oil for 5-6 minutes. Add the garlic and ginger and sauté for another 1-2 minutes.
Add the carrots, vegetable broth, salt, pepper and thyme. Cook for 20-30 minutes until the carrots are soft.
Put in the blender and beat until you get a velvety soup. Transfer back to the pot. Add the coconut milk and lime juice. Stir and serve.
