A rainbow salad that has it all.
for the salad
- 2 cup cooked pasta
- a Mediterranean Salad Freskoulis
- 1 red pepper
- 1/4 cup cashews
for the dressing
- 1/4 cup tahini
- 1/4 lemon
- 1 garlic clove
- a little ginger
- 1/2 tbsp maple syrup
- 1 tbsp olive oil
- 1 tbsp water
- salt
Start by boiling your pasta according to the instructions on the package in salted water. Drain them.
Put the pasta, a Mediterranean Freskoulis salad, the red pepper and the cashews in a bowl.
In a small bowl, mix all the ingredients for the dressing. Drizzle the salad with the dressing and mix well.
