The authentic moutabal is here and is ideal for vegans but also for those who are fasting.
- 2 eggplants
- 1/3 cup tahini
- 1/2 lemon
- 1-2 tbsp olive oil
- salt
- garlic
- olive oil and smoked paprika for serving
Start by baking the aubergines at 200 degrees for 30 minutes after cutting them in half and adding a little olive oil and a little salt.
With a spoon, remove the crumb from the aubergines and throw it in a bowl.
Add the tahini, lemon juice, olive oil, salt and garlic. Stir.
Serve with a little olive oil and a little smoked paprika.
