Start by mixing olive oil with melted banana, yogurt, vanilla and flaxseed with water.
Stir. Then add the almond flour, gluten-free flour, baking soda, baking powder, cinnamon, a little salt, monk fruit sugar and grated carrot.
Mix and transfer the mixture either to a cake tin or to a pan of your choice. Bake in a preheated oven at 180 degrees for 30-35 minutes.
