Spanakoryzo without rice

Why do I say spanakoryzo while it does not contain rice? Because it looks very much like it in taste.

Ingredients

  • 1 onion
  • 1 garlic clove
  • 1 red pepper
  • 1/2 broccoli
  • 5-6 tbsp coconut milk
  • 1 tbsp corn flour or flour
  • salt
  • black pepper
  • 4-5 cup mushrooms of your choice
  • 5-6 cup frozen spinach
  • 1 tbsp olive oil
  • 1/2 cup shredded vegan cheese I used vegan cheddar

Instructions 

  • Start by heating the olive oil in a large pan or saucepan.
  • Saute the onion and garlic for 2-3 minutes. Add the pepper, broccoli and mushrooms. Cook for 5-6 minutes. Add coconut milk salt and pepper. Add the flour.
  • Mix well. Add the spinach. Once softened, add the cheese and once melted, serve.
