Why do I say spanakoryzo while it does not contain rice? Because it looks very much like it in taste.
- 1 onion
- 1 garlic clove
- 1 red pepper
- 1/2 broccoli
- 5-6 tbsp coconut milk
- 1 tbsp corn flour or flour
- salt
- black pepper
- 4-5 cup mushrooms of your choice
- 5-6 cup frozen spinach
- 1 tbsp olive oil
- 1/2 cup shredded vegan cheese I used vegan cheddar
Start by heating the olive oil in a large pan or saucepan.
Saute the onion and garlic for 2-3 minutes. Add the pepper, broccoli and mushrooms. Cook for 5-6 minutes. Add coconut milk salt and pepper. Add the flour.
Mix well. Add the spinach. Once softened, add the cheese and once melted, serve.
