Leek and Cauliflower Soup

A wonderful leek and cauliflower soup that you will love to make.

Ingredients

  • 1 tbsp olive oil 
  • 3 leeks
  • 3 garlic cloves 
  • 1 cauliflower 
  • 500 ml. vegetable broth 
  • thyme 
  • salt and black pepper 
  • spring onion for decoration
  • croutons for decoration

Instructions 

  • Heat the olive oil in a saucepan. Add the leek and stir for a few minutes. 
  • Add the garlic and after 2-3 minutes add the cauliflower, vegetable stock, thyme, salt and pepper. 
  • Boil until the cauliflower is soft. 
  • Remove from the heat and transfer the entire contents of the pot to a blender. Blend well. If your soup is too thick, add a little more hot water. Blend again. 
  • Taste and add more salt and pepper if needed. 
  • Serve with croutons and chopped spring onion (if you like).
