A wonderful leek and cauliflower soup that you will love to make.
- 1 tbsp olive oil
- 3 leeks
- 3 garlic cloves
- 1 cauliflower
- 500 ml. vegetable broth
- thyme
- salt and black pepper
- spring onion for decoration
- croutons for decoration
Heat the olive oil in a saucepan. Add the leek and stir for a few minutes.
Add the garlic and after 2-3 minutes add the cauliflower, vegetable stock, thyme, salt and pepper.
Boil until the cauliflower is soft.
Remove from the heat and transfer the entire contents of the pot to a blender. Blend well. If your soup is too thick, add a little more hot water. Blend again.
Taste and add more salt and pepper if needed.
Serve with croutons and chopped spring onion (if you like).
