Salad in a Jar

Easy, quick, summer salad that you can prepare today and have food for 2 days.

Ingredients

for the dressing

  • 1/3 cup lemon juice
  • 2 tbsp olive oil 
  • 2 tbsp maple syrup or honey 
  • 1 garlic clove 
  • salt and black pepper 

for the salad

  • 170 gr. orzo from Melissa
  • 1 can chickpeas
  • 1/2 onion 
  • 1 carrot 
  • 2 cup cabbage 
  • 1 cup cherry tomatoes 
  • 100 gr. vegan feta cheese 
  • 2 cup arugula 

Instructions 

  • Mix all the ingredients for the dressing in a bowl. Pour half into each jar. 
  • Pour the onion, carrot, cabbage, cherry tomatoes on top. Continue with the boiled orzo and chickpeas. Put the feta on top and finally the arugula. Close the jars and put them in the fridge. 
  • When you want to eat your salad, simply empty your jar onto a plate and mix.
