Oven Baked Rice Balls

A wonderful #zerofoodwaste recipe that you can make whenever you have more rice.

Ingredients

  • 2 cup boiled rice
  • 2 tbsp olive oil
  • 1 tbsp water
  • black pepper
  • paprika
  • 6 small vegan feta cubes

Instructions 

  • Start by mixing the rice, spices, olive oil and water in a bowl.
  • Put everything in the blender. Beat well until smooth.
  • Divide the mixture into 6 equal parts.
  • Put the first mixture on a piece of foil, spread it with your hands carefully and put a vegan feta cube in the center. Close the membrane by forming a pouch. Rotate the pouch to create a ball. 
  • Open the foil and transfer your ball to non-stick paper in a baking tray. 
  • Continue with the remaining mixtures. Bake in a preheated oven at 180C for 30-40 minutes depending on how small or large your croquettes are. Turn them halfway through the year. Enjoy your rice croquettes with sauce of your choice.
