Potatoes with Eggs in the Oven

An easy, tasty, filling meal starring the potatoes and eggs that we used to eat when we were very young.

Ingredients

  • 3 eggs in big pieces
  • 3 eggs
  • 75 gr. cottage cheese
  • 50 ml milk
  • 50 gr. shredded cheese of your choice
  • salt, paprika, oregano
  • 1 cup water
  • 2 tbsp olive oil

Instructions 

  • We start by mixing the potatoes with the olive oil and spices in a bowl. Spread on a tray.
  • Add the water and bake in a preheated oven at 180C for 45 minutes.
  • Beat the eggs with the cottage cheese, milk and cheese in a bowl. I also add some salt and oregano and beat again.
  • Pour the egg mixture over the potatoes. Stir and bake for another 15 minutes.
  • I take it out, let it cool for about 5 minutes and cut it into pieces.
