An easy, tasty, filling meal starring the potatoes and eggs that we used to eat when we were very young.
- 3 eggs in big pieces

- 75 gr. cottage cheese
- 50 ml milk
- 50 gr. shredded cheese of your choice
- salt, paprika, oregano
- 1 cup water
- 2 tbsp olive oil
We start by mixing the potatoes with the olive oil and spices in a bowl. Spread on a tray.
Add the water and bake in a preheated oven at 180C for 45 minutes.
Beat the eggs with the cottage cheese, milk and cheese in a bowl. I also add some salt and oregano and beat again.
Pour the egg mixture over the potatoes. Stir and bake for another 15 minutes.
I take it out, let it cool for about 5 minutes and cut it into pieces.
