The most delicious, healthy, very easy ice cream sandwich you will make this year.

Ingredients

  • 14 sugar free biscuits
  • 1/4 cup frozen berries
  • 110 gr. vegan cream cheese 
  • 180 gr. vegan coconut yogurt
  • 3 tbsp maple syrup or sugar substitute of choice

Instructions 

  • In a bowl, mix the cream cheese with the yogurt. Once combined add the maple syrup and then the berries. Mix well.
  • Take a digestive cookie and put on 2-3 tsp from the cheesecake mixture. Cover with another cookie. Do the same until you have are done with the cheesecake mixture.
  • Put in the freezer for at least 4 hours before enjoying. When you want to eat an ice cream sandwich, take it out of the freezer and leave it outside for 5-10 minutes before eating it.
