The most delicious, healthy, very easy ice cream sandwich you will make this year.
- 14 sugar free biscuits
- 1/4 cup frozen berries
- 110 gr. vegan cream cheese
- 180 gr. vegan coconut yogurt
- 3 tbsp maple syrup or sugar substitute of choice
In a bowl, mix the cream cheese with the yogurt. Once combined add the maple syrup and then the berries. Mix well.
Take a digestive cookie and put on 2-3 tsp from the cheesecake mixture. Cover with another cookie. Do the same until you have are done with the cheesecake mixture.
Put in the freezer for at least 4 hours before enjoying. When you want to eat an ice cream sandwich, take it out of the freezer and leave it outside for 5-10 minutes before eating it.
