It is simply delicious and full of nutrients.
- 4 potatoes
- 2 onions
- 2 peppers
- 3 carrots
- 1 broccoli
- 2-3 garlic cloves
- 1/2 cup olive oil
- 1/2 cup water
- 1 tsp salt
- 1 tsp chili
- 1 tsp thyme
- 1 tsp cumin
- 1 tsp tomato paste
Start by preparing the "sauce". In a bowl, mix the olive oil, water, spices and tomato paste.
Put all the vegetables in a pan and pour the sauce over. Mix well.
Cover with non-stick paper. Bake in a preheated oven at 200C for 30 minutes.
Uncover, stir and bake for another 10-15 minutes. Take out and enjoy with cool yogurt. You will have fun.
