a great lunch you'll want to make again and again.
- 3 potatoes
- 1 onion
- 3 black garlic cloves
- 500 gr. mushrooms
- 1 red pepper
- 300 gr. tomato sauce
- water
- salt
- paprika
- black pepper
- 3/4 cup vegan shredded cheese
- 4-6 tomato
- 2-3 tbsp olive oil
Start by mixing the potatoes after cutting them into slices with salt, spices and olive oil. Spread on a tray and bake at 180C for 20 minutes.
In the meantime, pour some olive oil into a non-stick pan. Once heated, add the onion, garlic and red pepper. After 3-4 minutes add the mushrooms. Mix and pour the tomato sauce and a little water.
Add spices and salt and cook for 6-7 minutes or until most of the liquid is absorbed. Set aside.
Spread the mushroom mixture over the potatoes. Pour the grated cheese and tomato slices on top. Bake for about 15 minutes. Let the food cool for 5 minutes, then cut into pieces and serve.
