Quick, easy, nutritious and very very tasty.
- 1 cup parboiled wild rice
- 1 cup cucumber
- 1/2 cup onion
- 1/2 cup olives
- 2 tbsp lemon
- 2 tbsp parsley or dill
- salt
- black pepper
- oregano
- 1-2 tbsp olive oil
Start by boiling your rice in salted water. While this is boiling chop all your vegetables.
Drain the rice and mix it with all the vegetables, olive oil, lemon juice, salt, pepper and oregano. Serve with pita bread like I did or with some vegan (or non-vegan) feta.
