Mushrooms in Lemon Sauce

Ingredients

  • 250 gr. mushrooms
  • 2-3 parsley
  • 1 tbsp olive oil
  • 1/2 tsp thyme
  • 1/2 tsp paprika
  • 100 gr. coconut cream
  • 1 cup vegetable broth
  • 1/2 tsp flour
  • 1 red pepper (if you want)
  • 1/2 lemon
  • salt and red pepper
  • 170 gr. pasta of your choice

Instructions 

  • Start by boiling your pasta in salted water according to the instructions on the package.
  • Put all the mushrooms in a large bowl. Add the salt, red pepper, paprika, thyme. Mix and add the olive oil.
  • Put the mushrooms in a non-stick pan and leave them for about 4-5 minutes.
  • Add the pepper if you choose to put it.
  • Pour in the broth, coconut cream and mix. Add the flour and mix. Your sauce will begin to thicken.
  • Add the parsley and lemon juice. Continue cooking until your mushrooms are done.
  • Drain your pasta and serve your food.
