A wonderful, summer food that apart from being light is also very very tasty.
- 500 gr. leeks
- 2 tbsp olive oil
- 2-3 spring onions
- 1 red pepper
- 1 orange pepper
- 2 garlic cloves
- 150 gr. brown rice
- 150 gr. tomatoes
- salt
- black pepper
- lemon juice
Start by heating the olive oil in a saucepan. Add the leeks, salt and black pepper.
Stir for 2-3 minutes and add the spring onions, garlic and rice. Stir for 2-3 minutes and add the tomatoes and hot water. Leave. boil all ingredients for 10 minutes.
If the water is saved, add more. In 10 minutes, add the peppers. Leave for another 10 minutes and set aside.
Serve with lemon.
