Leeks with Rice and Colorful Peppers

A wonderful, summer food that apart from being light is also very very tasty.

Ingredients

  • 500 gr. leeks
  • 2 tbsp olive oil
  • 2-3 spring onions
  • 1 red pepper
  • 1 orange pepper
  • 2 garlic cloves
  • 150 gr. brown rice
  • 150 gr. tomatoes
  • salt
  • black pepper
  • lemon juice

Instructions 

  • Start by heating the olive oil in a saucepan. Add the leeks, salt and black pepper.
  • Stir for 2-3 minutes and add the spring onions, garlic and rice. Stir for 2-3 minutes and add the tomatoes and hot water. Leave. boil all ingredients for 10 minutes.
  • If the water is saved, add more. In 10 minutes, add the peppers. Leave for another 10 minutes and set aside.
  • Serve with lemon.
