The easiest winter curry that will blow your mind. It is simple and at the same time comforting.
- 3-4 leeks
- 300 gr. coconut milk
- 1 tbsp curry powder
- salt and black pepper
Start by boiling the leeks in salted water for 15 minutes. Drain them.
Pour the coconut milk into a non-stick pan or wok. Add the curry and leeks. Add salt and black pepper. Taste and if you like add some smoked paprika.
Stir for 2-3 minutes and set aside. Serve with steamed rice.
If you want, add some vegetable feta. It fits perfectly.
