for the mushrooms
- 400 gr. mushrooms
- onion powder
- smoked paprika
- cumin
- salt
- black pepper
for the rice
- 170 gr. brown rice
- 1 onion
- 1 red pepper
- 1 green onion
- cumin, paprika
- 1 tbsp olive oil
- 400 ml water
for the green sauce
- 100 gr. yogurt
- 30 gr. light mayo
- 2 garlic cloves
- 1/2 cup parsley
- 1/4 lemon
- salt and pepper
We start by cutting our mushrooms into pieces. Mix them with the spices and cook them in a non-stick pan without olive oil. Add a little water if necessary. We put them aside.
In the same pan, add the peppers and the onion. Add a little olive oil. Add the spices and the rice. Add hot water and leave until the rice is cooked for 10 minutes.
While the rice is boiling, put all the ingredients for the green sauce in a blender. Beat well until a sauce is formed. Add a little water if necessary.
We prepare our air-tight containers. Put the rice with the peppers on the bottom, the mushrooms and some of the sauce on top and put it in the fridge.
