Giouvetsi with Mushrooms

Divine, vegan giouvetsi with whole mushrooms that you will love to eat.

Ingredients

  • 500 gr. mushrooms
  • 1 tbsp olive oil
  • 1 onion
  • 1/4 tsp cinnamon
  • salt and black pepper
  • 1 tbsp tomato paste
  • 3/4 cup water
  • 1/4 cup red wine
  • 1 cup tomato sauce
  • 3 cup water
  • 1/2 cup orzo

Instructions 

  • We start by pouring olive oil into a deep pan or shallow pot.
  • Saute the onion together with the cinnamon, salt and black pepper.
  • Add the tomato paste.
  • After 3-4 minutes pour the wine. Leave for 3-4 minutes and add 3/4 fl. water and tomato sauce. As soon as they boil, add the mushrooms.
  • Lower the temperature and cover. Leave for 10 minutes.
  • Preheat the oven to 180 C.
  • Uncover and pour in the rest of the water and the orzo.
  • Mix for 1-2 minutes and transfer to a baking tray. Bake in the oven for 20-25 minutes. If necessary, add a little more hot water.
  • Serve with plant based yellow cheese or plant based feta.
