We start by boiling the beans in salted water. We drain them.
Beat the spinach, vegan feta, water and lemon juice in a food processor.
Finely chop the spring onion and separate the white part from the green part. Sauté the white part of the spring onion in a tablespoon of olive oil for 2 minutes.
Add the garlic and saute for another 2 minutes.
Pour in the spinach sauce.
In a bowl, mix 1 tbsp. water and 1 tbsp. corn flour.
Pour the mixture into the sauce and the giants. Cook at a low temperature until it thickens. It won't take more than 4-5 minutes.
Serve with some extra vegan feta and the green part of the spring onion.
