With the first zucchini of spring we make the most perfect zucchini pie with oat flour.
- 3 zucchini
- 1 onion
- 1/2 cup frozen peas
- 100 gr. vegan feta (if you want)
for the porridge
- 2 cup oat flour
- 2 cup water
- 2 tbsp olive oil
- 1/2-1 tbsp salt
Start by slicing the zucchini and onion. Salt them and leave them aside for 30 minutes to release their liquid.
In a bowl, mix all the ingredients for the porridge, oats, water, olive oil and salt. Set aside also for 30 minutes.
Drain the courgettes well to remove their liquid. Mix them with the oatmeal and vegetable feta.
Transfer to a greased pan. Pour over the peas or stir them into the mixture. Pour all the mixture into the pan.
Bake in a preheated oven at 180C for 50-60 minutes.
Remove from the oven and let your pie cool for 30 minutes before cutting.
