Start by mixing in a bowl the coconut flour, cocoa powder, sugar substitute, butter, maple syrup, baking powder, vanilla and salt.
Make balls and put them in a pan on non-stick paper. Press each ball with the bottom of a glass to make a flat.
Bake in a preheated oven for 10-12 minutes at 180C.
In another bowl, mix the cream cheese with the icing substitute.
Put a teaspoon of the filling in a cookie and cover with a second cookie after they have cooled completely.
Keep them in the fridge to be cooler now in the summer.
