Green Pasta Salad

A super easy, summery recipe.

Ingredients

  • 170 gr. penne
  • 2 cucumbers
  • 1/2 onion
  • 3 cup cherry tomatoes
  • 1 cup olives
  • fresh dill
  • 1 cup vegan feta cheese

for the dressing

  • 1/4 cup water
  • 1/3 cup olive oil
  • 2 tbsp apple vinegar
  • 1/2 lemon
  • 2 tbsp maple syrup or honey
  • 2 tsp mustard
  • 3 garlic cloves
  • salt
  • black pepper
  • fresh dill

Instructions 

  • Boil your penne in salted water according to the instructions on the package. Pour cold water on your pasta and drain.
  • Put all the ingredients for the salad and pasta in a bowl.
  • In a small bowl, mix all the ingredients for the dressing. Pour over the salad and mix well.
  • Enjoy.
