A super easy, summery recipe.
- 170 gr. penne
- 2 cucumbers
- 1/2 onion
- 3 cup cherry tomatoes
- 1 cup olives
- fresh dill
- 1 cup vegan feta cheese
for the dressing
- 1/4 cup water
- 1/3 cup olive oil
- 2 tbsp apple vinegar
- 1/2 lemon
- 2 tbsp maple syrup or honey
- 2 tsp mustard
- 3 garlic cloves
- salt
- black pepper
- fresh dill
Boil your penne in salted water according to the instructions on the package. Pour cold water on your pasta and drain.
Put all the ingredients for the salad and pasta in a bowl.
In a small bowl, mix all the ingredients for the dressing. Pour over the salad and mix well.
