A very easy salad that you will want to eat all spring and summer!
for the salad
- 3/4 cup raw lentils
- 2 cup cabbage
- 2 cup cherry tomatoes
- 2 spring onions
- 120 gr. vegan feta cheese
for the dressing
- 1 handful of walnuts
- 1/2 garlic clove
- 1/2 tbsp maple syrup
- 1 tbsp vinegar
- 2 tbsp olive oil
- salt
- black pepper
- 1/2-1 tbsp water
Start by boiling the lentils in lightly salted water. They want around 30 minutes. Drain them.
Meanwhile, chop the vegetables.
For the dressing, first hit the nuts in the blender. Then mix with the remaining ingredients. Add a little water to make the dressing a little thinner. Mix all the ingredients together and enjoy.
