To make them you too will need apples, raisins, semolina, olive oil, oat or rice flour, lemon and bakind powder.

Soft Cookies with Apples and Raisins
Ingredients
- 2 shredded apples
- 2 tbsp lemon juice
- 80 gr. semolina flour
- 100 gr. raisins
- 50 gr. olive oil
- 130 gr. oat flour or rice flour
- 1 tsp baking powder
Instructions
- Start by grating your apples after cleaning them with the coarse side of the grater.
- Transfer them to a bowl along with their juices. Add the semolina and raisins and mix.
- Cover with cling film and refrigerate for 1 hour.
- Then add the olive oil, oat or rice flour, baking powder and lemon juice. Mix until you have a perfect dough.
- Form 12 cookies and put them on non-stick paper in a pan.
- Bake in a preheated oven at 180 degrees for 30-40 minutes.
- Your cookies are ready.
