This is a very easy recipe. To prepare it you will need spinach, potato, onion, pepper, milk and grated mozzarella.

TIPS AND SUBSTITUTIONS

If you are vegan, you can use plant-based milk instead of milk and plant-based mozzarella or any other plant-based cheese of your choice instead of mozzarella.

You can, if you want, add another vegetable to your recipe, such as mushrooms.

Ingredients

  • 2 onions
  • 1 green pepper
  • 1 potato
  • 1/2 kg spinach
  • 2 tbsp olive oil
  • 1 tbsp flour
  • 1 cup milk
  • salt and black pepper
  • shredded mozzarella

Instructions 

  • Heat the olive oil in a large pan.
  • Once heated, add the onion, potato and pepper. Stir for a while and add the spinach. Pour in the milk, salt, pepper and flour. Stir, lower the heat and cover the pan.
  • Open the lid every now and then to see what's going on and stir.
  • Vegetables don't take long to cook.
  • Transfer them to a baking tray and pour the grated mozzarella on top.
  • Bake in a preheated oven at 180C in the air and up and down for 15-20 minutes.
  • The spinach au gratin is ready and very very tasty.
