And the truth is that the vegan version is also very tasty. To make it you will need 20 minutes and few, very simple ingredients.

What are these; Boiled chickpeas, garlic, tomato paste, vegetable stock and coconut milk. The spices are what make the difference.

Tips and Substitutions

Coconut milk is canned and you will find it in all supermarkets.

You can also use raw chickpeas, but you should boil them well first. For faster you can use, as I did, chickpeas boiled from a can. All you have to do is wash them well before adding them to your recipe.

These chickpeas will make him propose to you. At least that's what those who made them say.

Ingredients

  • 1 tbsp olive oil 
  • 1 garlic clove 
  • 1/4 tsp chilli 
  • 1/2 tsp thyme 
  • 1/4 tsp oregano 
  • 1/8 tsp black pepper 
  • 400 gr. boiled chickpeas
  • 1 tbsp tomato paste
  • 100 ml vegetable stock 
  • 100 ml coconut milk
  • salt and black pepper 

Instructions 

  • We start by sauteing the garlic in olive oil. After 1-2 minutes add all the spices and mix.
  • Add the tomato paste. Add the hot vegetable stock and the boiled chickpeas.
  • Cover the pot with a lid and cook for 10 minutes.
  • Uncover and add the coconut milk. Stir and cook for another 5 minutes. Set aside and serve.
