A wonderful recipe that you will love to make. It reminds me of lemon chicken, but it's not. They are mushrooms in lemon sauce and they are delicious.
INGREDIENTS AND SUBSTITUTIONS
Mushrooms: You can use any mushrooms you want or even a variety of mushrooms. This time I used pleurotus mushrooms.
Red pepper: It gives color, more flavor and more nutrients to your food. But you put it on if you want. It is not mandatory.
Parsley: For me he is indispensable. You will need 2-3 sprigs chopped
Coconut cream: The recipe is vegan and that's why we use coconut cream. If you are not vegan, you can use light cream.
Vegetable stock: Also essential as it gives even better taste to our food. If you don't have it, you can use plain water.
Flour: It is needed to thicken your sauce. You can use corn flour instead of flour.
What can you serve mushrooms in lemon sauce with?
With whatever you want. For me rice is perfect as are small pasta. Alternatively, you can serve with French fries.

Mushrooms in Lemon Sauce
Ingredients
- 250 gr. mushrooms
- 2-3 parsley
- 1 tbsp olive oil
- 1/2 tsp thyme
- 1/2 tsp paprika
- 100 gr. coconut cream
- 1 cup vegetable broth
- 1/2 tsp flour
- 1 red pepper (if you want)
- 1/2 lemon
- salt and red pepper
- 170 gr. pasta of your choice
Instructions
- Start by boiling your pasta in salted water according to the instructions on the package.
- Put all the mushrooms in a large bowl. Add the salt, red pepper, paprika, thyme. Mix and add the olive oil.
- Put the mushrooms in a non-stick pan and leave them for about 4-5 minutes.
- Add the pepper if you choose to put it.
- Pour in the broth, coconut cream and mix. Add the flour and mix. Your sauce will begin to thicken.
- Add the parsley and lemon juice. Continue cooking until your mushrooms are done.
- Drain your pasta and serve your food.
