Pasta Sauce with Hidden Veggies
Ingredients
- 300 gr. pasta of your choice
for the sauce
- 400 gr. pumpkin
- 1 carrot
- 1 onion cut in 4
- 1 tomato
- 1 red pepper
- 100 gr. feta cheese or vegan feta
- olive oil
- salt and pepper
- 50 ml coconut milk
Instructions
- Start by boiling your pasta in salted water according to the instructions on the package.
- In the meantime, put the feta cheese and all your vegetables, olive oil, salt and pepper in a pan. Bake in a preheated oven at 180C for 30 minutes.
- Remove from the oven and beat in a blender with the coconut milk.
- Mix your sauce with your pasta. Enjoy.
