Curry lentils with rice. The ultimate Thai in your home!

This #yummylegumes recipe will make you see lentils with a different eye.

The basic ingredients you will need to prepare it are beluga lentils, tomato, onion, pepper, carrot and curry.

For me, rice is the perfect side dish for this dish.

When is this food tastiest?

Although it is delicious hot when first cooked, this dish is much tastier if cooked in the morning and eaten several hours later or even the next day (after a full day in the fridge). The reason is because they have time for the ingredients to bond well together and for the flavors and aromas to mix well.

How long you can keep them in the fridge?

You can put them in an airtight container and keep them in the fridge for 4-5 days. You can also put them in the freezer.

A wonderful comfort food ideal for this weather and not only.

Ingredients

  • 1 1/2 cup beluga lentils 
  • 1 onion 
  • 1 red pepper 
  • 1 carrot 
  • 1 tbsp garlic 
  • 1 tbsp olive oil
  • 1 tsp garlic 
  • 1 tsp onion 
  • 1 tsp ginger 
  • 2 tsp curry 
  • salt 
  • 4 tbsp tomato paste 
  • 8 cup vegetable broth
  • 250 gr. tomato sauce
  • 1/8 tsp baking soda 
  • 1 tsp χυμό λάιμ 
  • 1/2 cup coconut milk (if you want)
  • rice 

Instructions 

  • Start by pouring the olive oil into a pot. Once heated, add the onion, pepper, carrot. Saute for 7-8 minutes.
  • Add the chopped garlic, ginger, curry and tomato paste.

  • Pour in the baking soda and mix for 1 minute. Add the lentils along with the rest of the spices. Cook for 30-40 minutes at a low temperature.
  • Add the lime and coconut milk. Cook another 5 minutes and set aside. Leave for 15 minutes before serving. Or let your food cool completely and refrigerate it in an airtight container for the next day.
