You may have used to eat eggplants in many different ways, but I'm sure you haven't tried this recipe.

To make it you will need eggplants, feta cheese, egg, dill, corn flour, salt and black pepper.

Tips and Substitutions

If you don't have fresh dill and you have frozen dill, you can add 3 tbsp. frozen dill in your recipe.

If you don't have an airfryer, you can bake in a preheated oven at 180 C for 25-30 minutes.

A different way to make your eggplants is this.

Ingredients

  • 1 eggplant cut in 7-8 slices
  • 200 gr. feta cheese
  • 1 egg
  • 2 tbsp corn flour
  • 1 bunch of dill, chopped
  • salt
  • black pepper

Instructions 

  • Start by slicing your eggplant. Put them in a bowl of salted water and leave them there for 15 minutes. Take them out and wipe them with a towel.
  • In a bowl, mix all the remaining ingredients.
  • Put 2 tbsp. of the mixture on each eggplant.
  • Bake in the airfryer at 190 C for 20 minutes.
