Did you also eat potatoes with eggs in the oven as a child? My mom used to make this food very often and I said I should make it too to remember some of those very good times.
The ingredients you will need to make this wonderful dish are potatoes, eggs, cottage cheese, milk and some grated cheese.
When I was little my mom used yogurt instead of cottage cheese but I said to make the food a little more protein so I replaced the yogurt with cottage cheese.

Potatoes with Eggs in the Oven
Ingredients
- 3 eggs in big pieces
- 3 eggs
- 75 gr. cottage cheese
- 50 ml milk
- 50 gr. shredded cheese of your choice
- salt, paprika, oregano
- 1 cup water
- 2 tbsp olive oil
Instructions
- We start by mixing the potatoes with the olive oil and spices in a bowl. Spread on a tray.
- Add the water and bake in a preheated oven at 180C for 45 minutes.
- Beat the eggs with the cottage cheese, milk and cheese in a bowl. I also add some salt and oregano and beat again.
- Pour the egg mixture over the potatoes. Stir and bake for another 15 minutes.
- I take it out, let it cool for about 5 minutes and cut it into pieces.
