To make the zucchini pie filling you will need: zucchini, onion, peas, vegan feta.

Spring Zucchini Pie

With the first zucchini of spring we make the most perfect zucchini pie with oat flour.

Ingredients

  • 3 zucchini
  • 1 onion
  • 1/2 cup frozen peas
  • 100 gr. vegan feta (if you want)

for the porridge

  • 2 cup oat flour
  • 2 cup water
  • 2 tbsp olive oil
  • 1/2-1 tbsp salt

Instructions 

  • Start by slicing the zucchini and onion. Salt them and leave them aside for 30 minutes to release their liquid.
  • In a bowl, mix all the ingredients for the porridge, oats, water, olive oil and salt. Set aside also for 30 minutes.
  • Drain the courgettes well to remove their liquid. Mix them with the oatmeal and vegetable feta.
  • Transfer to a greased pan. Pour over the peas or stir them into the mixture. Pour all the mixture into the pan.
  • Bake in a preheated oven at 180C for 50-60 minutes.
  • Remove from the oven and let your pie cool for 30 minutes before cutting.
