The first zucchini pie of spring is here and it's full of divine flavor and lots of veggies.
To make the porridge you will need: oat flour or chickpea flour,
To make the zucchini pie filling you will need: zucchini, onion, peas, vegan feta.

Spring Zucchini Pie
With the first zucchini of spring we make the most perfect zucchini pie with oat flour.
Ingredients
- 3 zucchini
- 1 onion
- 1/2 cup frozen peas
- 100 gr. vegan feta (if you want)
for the porridge
- 2 cup oat flour
- 2 cup water
- 2 tbsp olive oil
- 1/2-1 tbsp salt
Instructions
- Start by slicing the zucchini and onion. Salt them and leave them aside for 30 minutes to release their liquid.
- In a bowl, mix all the ingredients for the porridge, oats, water, olive oil and salt. Set aside also for 30 minutes.
- Drain the courgettes well to remove their liquid. Mix them with the oatmeal and vegetable feta.
- Transfer to a greased pan. Pour over the peas or stir them into the mixture. Pour all the mixture into the pan.
- Bake in a preheated oven at 180C for 50-60 minutes.
- Remove from the oven and let your pie cool for 30 minutes before cutting.
