The fast for Easter has begun and so have my fasting recipes. These spinach and feta beans are just a dream.

You can enjoy this food plain with some toasted bread or with wild rice as I prefer.

Beans With Spinach and Feta

One of the nicest fasting foods that you can enjoy throughout fasting and beyond.

Ingredients

  • 400 gr. white beans
  • 150 gr. frozen spinach
  • 170 gr. vegan feta cheese
  • 140 ml water
  • 1 tbsp lemon juice
  • 2 spring onions
  • 4 garlic cloves
  • 1 tbsp corn flour (+ 1 tbsp water)
  • salt and pepper
  • 1 tbsp olive oil

Instructions 

  • We start by boiling the beans in salted water. We drain them.
  • Beat the spinach, vegan feta, water and lemon juice in a food processor.
  • Finely chop the spring onion and separate the white part from the green part. Sauté the white part of the spring onion in a tablespoon of olive oil for 2 minutes.
  • Add the garlic and saute for another 2 minutes.
  • Pour in the spinach sauce.
  • In a bowl, mix 1 tbsp. water and 1 tbsp. corn flour.
  • Pour the mixture into the sauce and the giants. Cook at a low temperature until it thickens. It won't take more than 4-5 minutes.
  • Serve with some extra vegan feta and the green part of the spring onion.
