The fast for Easter has begun and so have my fasting recipes. These spinach and feta beans are just a dream.

You can enjoy this food plain with some toasted bread or with wild rice as I prefer.

Beans With Spinach and Feta
One of the nicest fasting foods that you can enjoy throughout fasting and beyond.
Ingredients
- 400 gr. white beans
- 150 gr. frozen spinach
- 170 gr. vegan feta cheese
- 140 ml water
- 1 tbsp lemon juice
- 2 spring onions
- 4 garlic cloves
- 1 tbsp corn flour (+ 1 tbsp water)
- salt and pepper
- 1 tbsp olive oil
Instructions
- We start by boiling the beans in salted water. We drain them.
- Beat the spinach, vegan feta, water and lemon juice in a food processor.
- Finely chop the spring onion and separate the white part from the green part. Sauté the white part of the spring onion in a tablespoon of olive oil for 2 minutes.
- Add the garlic and saute for another 2 minutes.
- Pour in the spinach sauce.
- In a bowl, mix 1 tbsp. water and 1 tbsp. corn flour.
- Pour the mixture into the sauce and the giants. Cook at a low temperature until it thickens. It won't take more than 4-5 minutes.
- Serve with some extra vegan feta and the green part of the spring onion.
